Texas BBQ Sauce
Ingredients
2 tbsp butter
1/4 cup finely chopped yellow onion
1 clove garlic, pressed
1 cup ketchup or 3 Roma Tomatoes (if using tomatoes, peel and chop them finely)
1/4 cup firmly packed light brown sugar
1/4 cup freshly squeezed lemon juice
1 tbsp Worcestershire sauce
1 tbsp yellow mustard
Salt and pepper to taste
Olive oil for cooking
Instructions
In a medium saucepan, heat the olive oil over medium heat. Add the butter and let it melt.
Add the finely chopped yellow onion to the pan and sauté for about 5 minutes, until the onion is translucent.
Stir in the pressed garlic and cook for an additional minute, being careful not to let it burn.
If using Roma tomatoes, add them to the pan now and cook for about 3-4 minutes until they start to break down.
Add the ketchup (or cooked down tomatoes), brown sugar, lemon juice, Worcestershire sauce, and yellow mustard to the saucepan. Stir well to combine.
