Creamy Cheesesteak Pasta

Creamy Philly Cheesesteak Pasta

Ingredients

  • 3 Tbsp. neutral oil, divided
  • 1 lb. skirt steak or rib eye, thinly sliced across the grain
  • 1 tsp. Italian seasoning
  • 1 tsp baking soda
  • 1 tsp cornstarch
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste
  • 8 oz. cremini or white mushrooms, sliced
  • 1 medium yellow onion, thinly sliced
  • 1 green bell pepper, seeds and ribs removed, thinly sliced
  • 1 red bell pepper, seeds and ribs removed, thinly sliced
  • 4 cloves garlic, chopped
  • 3 1/2 cups low-sodium beef broth
  • 1 cup half-and-half
  • 8 oz. cavatappi pasta
  • 6 oz. shredded provolone


Instructions

  1. Prepare the Steak
    .
  • Season the thinly sliced steak with Italian seasoning, salt, and pepper, baking soda and cornstarch
  • Add 1 tbsp oil, let stand 15 min
  • Heat 1 Tbsp. oil in a large skillet over medium-high heat
  • Add the steak to the skillet and cook until browned, about 2–3 minutes per side. Remove and set aside.
  1. Cook the Vegetables

  • In the same skillet, add the remaining 1 Tbsp. oil.
  • Sauté the mushrooms, onion, green bell pepper, and red bell pepper for 5–6 minutes, until softened.
  • Stir in the chopped garlic and cook for 1 more minute until fragrant.
  1. Build the Sauce

  • Add the beef broth and half-and-half to the skillet. Bring to a gentle simmer.
  • Stir in the uncooked cavatappi pasta. Cover and cook for 10–12 minutes, stirring occasionally, until the pasta is al dente.
  1. Combine Everything

  • Lower the heat and mix the cooked steak back into the skillet.
  • Stir in the shredded provolone cheese until melted and creamy.
  • Adjust seasoning with additional salt and pepper, if needed.
  1. Serve

  • Spoon the creamy Philly cheesesteak pasta into bowls and enjoy warm.


Chef's Tips:

  • For extra cheesiness, sprinkle a bit more shredded provolone on top before serving.
  • Swap cavatappi with penne or another pasta if preferred.
