Instructions:
Sauté Garlic and Rice:
Activate the “Sauté More” function on your Instant Pot and wait until it displays “HOT”.
Rinse the Jasmine rice under cold water and drain thoroughly.
Add 1 tablespoon of vegetable oil or unsalted butter to the Instant Pot, ensuring the bottom is evenly coated.
Introduce the minced garlic and sauté for about 30 seconds until it becomes fragrant.
Add the rinsed rice and ½ teaspoon of salt. Stir and continue to sauté for an additional 30 seconds.
Deglaze the Instant Pot:
Pour in 1 cup of cold water or unsalted chicken stock.
Using a wooden spoon, gently scrape the bottom of the pot to release any browned bits, ensuring they're mixed into the liquid.
Pressure Cook the Rice:
Set the Venting Knob to the Venting Position, close the lid, and then turn the Venting Knob to the Sealing Position.
Pressure cook on High Pressure for 5 minutes.
After cooking, allow the pressure to release naturally for 10 minutes before carefully opening the lid.
Incorporate Lime and Cilantro:
Add 2 tablespoons of lime juice, the zest from one lime, and the finely chopped fresh cilantro to the cooked rice.
Gently fluff the rice using a rice paddle or fork to combine the ingredients.
Season and Serve:
Taste the rice and adjust the seasoning with additional kosher salt if necessary, based on your preference and the accompanying dishes.

Zest from one lime
15 grams fresh cilantro, finely chopped
