Ingredients
  

  • 1 lb 450 g large shrimp, peeled & deveined
  • 2 tsp Chili Lime Heat Rub https://keithskitchenchronicles.com/chipotle-lime-heat-rub/
  • 1 tbsp olive oil
  • 1 lime cut into wedges
  • 8 wooden or metal skewers

Method
 

Prep the Skewers
  1. If using wooden skewers, soak in water for 20–30 min to prevent burning.
Marinade the Shrimp
  1. In a bowl, toss shrimp with olive oil and Chili Lime Heat Rub until evenly coated.
  2. Let sit for 10–15 min to absorb flavors.
Assemble the Skewers
  1. Thread 4–5 shrimp per skewer.
Cook the Shrimp
  1. Grill method: Preheat grill to medium-high. Cook skewers 2–3 min per side until shrimp turn pink and opaque.
  2. Broil method: Preheat oven broiler. Place skewers on a foil-lined tray 4–6 inches from heat. Broil 2–3 min per side until cooked through.
Finish & Serve:
  1. Squeeze fresh lime over the shrimp and sprinkle with chopped cilantro if desired.
  2. Serve immediately with rice, salad, or grilled veggies.

Notes

Tips

  • For extra zest, add lime zest or a few drops of lime juice directly to the marinade.
  • Can also add bell peppers or red onion slices to the skewers for a colorful, tasty presentation.
