- 1 lb 450 g large shrimp, peeled & deveined
- 2 tsp Chili Lime Heat Rub https://keithskitchenchronicles.com/chipotle-lime-heat-rub/
- 1 tbsp olive oil
- 1 lime cut into wedges
- 8 wooden or metal skewers
Marinade the Shrimp
In a bowl, toss shrimp with olive oil and Chili Lime Heat Rub until evenly coated.
Let sit for 10–15 min to absorb flavors.
Cook the Shrimp
Grill method: Preheat grill to medium-high. Cook skewers 2–3 min per side until shrimp turn pink and opaque.
Broil method: Preheat oven broiler. Place skewers on a foil-lined tray 4–6 inches from heat. Broil 2–3 min per side until cooked through.
Finish & Serve:
Squeeze fresh lime over the shrimp and sprinkle with chopped cilantro if desired.
Serve immediately with rice, salad, or grilled veggies.
Tips
- For extra zest, add lime zest or a few drops of lime juice directly to the marinade.
- Can also add bell peppers or red onion slices to the skewers for a colorful, tasty presentation.
