Pasta Fagioli, Alph Gal Friendly

This version of Pasta Fagioli is a hearty, Italian-style bean and pasta soup made completely free of mammal meat and mammal-derived ingredients, making it safe for Alpha-Gal sufferers. Instead of traditional beef or pork sausage, it uses ground turkey or chicken sausage, along with chicken broth (verified mammal-free).
The soup features onions, carrots, celery, garlic, crushed tomatoes, kidney beans, cannellini beans, and small pasta, simmered together with classic Italian herbs for rich flavor. It’s finished with fresh parsley and optional dairy-free Parmesan.

Ingredients
  

Base
  • 2 tablespoons olive oil
  • 1 medium onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 cloves garlic minced
Protein
  • 1 pound ground turkey
  • OR
  • 12 oz chicken Italian-style sausage verify no pork casing or mammal ingredients
Seasoning
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • ½ teaspoon crushed red pepper optional
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt adjust to taste
  • ½ teaspoon black pepper
Liquids
  • 6 cups chicken broth confirm no beef base added
  • 1 15 oz can crushed tomatoes
  • 1 15 oz can diced tomatoes
Beans & Pasta
  • 1 15 oz can kidney beans, drained and rinsed
  • 1 15 oz can cannellini beans, drained and rinsed
  • 1 cup small pasta ditalini or small shells — check label for egg if avoiding
Finishing
  • 1 tablespoon fresh parsley
  • Dairy-free Parmesan optional
  • Extra virgin olive oil drizzle

Method
 

Bulid Flavor Base
  1. Heat olive oil in a large Dutch oven over medium heat.
  2. Add onion, carrots, and celery. Cook 5–7 minutes until softened.
  3. Stir in the garlic and cook for 30 seconds, until fragrant.

  1. Add ground turkey or chicken sausage.
  2. Cook until browned, breaking it apart as it cooks.
  3. Drain excess liquid if needed.
Season
  1. Add oregano, basil, Italian seasoning, salt, pepper, and crushed red pepper. Stir to coat everything evenly.
Simmer
  1. Pour in chicken broth, crushed tomatoes, diced tomatoes, and both beans.
  2. Bring to a gentle boil, then reduce to a simmer.
  3. Cook uncovered for 20 minutes.
add Pasta
  1. Stir in pasta and cook until tender (about 8–10 minutes).
  2. If the soup thickens too much, add a splash of broth or water. You can cook pasta separately or al dente. Run under cold water to stop cooking, and add to the bottom of the bowl when dishing out.
Finish
  1. Stir in fresh parsley.
  2. Taste and adjust salt and pepper.
  3. Serve with dairy-free Parmesan and a drizzle of olive oil.

Notes

Alpha-Gal Tips

  • Always verify sausage casings — many are pork-based.
  • Double-check broths for hidden beef stock.
  • Avoid traditional Parmesan (made with animal rennet). Use plant-based Parmesan instead.
  • Skip pancetta or bacon entirely.
