Instructions
Bulid Flavor Base
Heat olive oil in a large Dutch oven over medium heat.
Add onion, carrots, and celery. Cook 5–7 minutes until softened.
Stir in the garlic and cook for 30 seconds, until fragrant.
add Protien
Add ground turkey or chicken sausage.
Cook until browned, breaking it apart as it cooks.
Drain excess liquid if needed.
Season
Add oregano, basil, Italian seasoning, salt, pepper, and crushed red pepper. Stir to coat everything evenly.
Simmer
Pour in chicken broth, crushed tomatoes, diced tomatoes, and both beans.
Bring to a gentle boil, then reduce to a simmer.
Cook uncovered for 20 minutes.

Stir in pasta and cook until tender (about 8–10 minutes).
If the soup thickens too much, add a splash of broth or water. You can cook pasta separately or al dente. Run under cold water to stop cooking, and add to the bottom of the bowl when dishing out.
Finish
Stir in fresh parsley.
Taste and adjust salt and pepper.
Serve with dairy-free Parmesan and a drizzle of olive oil.
