Ingredients
  

  • 2 bone-in skin-on chicken breasts
  • Water enough to cover chicken
  • Salt to taste (for cooking and seasoning)
  • ¼ large onion diced
  • 2 stalks celery diced
  • 1 to 1¼ cups mayonnaise adjust to preference
  • 1 teaspoon garlic minced or powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Method
 

  1. Cook the Chicken
  2. Place the chicken breasts in a pot and cover with water. Add a pinch of salt. Bring to a gentle simmer and cook until the chicken is fully cooked and tender.
  3. Step 2: Shred the Chicken
  4. Remove the chicken from the pot and pull it off the bone while still hot (gloves help). Shred or chop the meat, discarding skin and bones.
  5. Step 3: Add the Vegetables
  6. In a large bowl, combine the shredded chicken with the diced onion and celery.
  7. Step 4: Mix in the Mayo
  8. Add the mayonnaise and mix until the chicken salad reaches your desired consistency.
