Cook the Chicken
Place the chicken breasts in a pot and cover with water. Add a pinch of salt. Bring to a gentle simmer and cook until the chicken is fully cooked and tender.
Step 2: Shred the Chicken
Remove the chicken from the pot and pull it off the bone while still hot (gloves help). Shred or chop the meat, discarding skin and bones.
Step 3: Add the Vegetables
In a large bowl, combine the shredded chicken with the diced onion and celery.
Step 4: Mix in the Mayo
Add the mayonnaise and mix until the chicken salad reaches your desired consistency.
Step 5: Season
Add garlic, salt, and black pepper. Mix well and taste, adjusting seasoning if needed.
Step 6: Serve
Serve immediately or refrigerate for later. The flavor gets even better after chilling.
