Ingredients

  • 2 bone-in skin-on chicken breasts
  • Water enough to cover chicken
  • Salt to taste (for cooking and seasoning)
  • ¼ large onion diced
  • 2 stalks celery diced
  • 1 to 1¼ cups mayonnaise adjust to preference
  • 1 teaspoon garlic minced or powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt

Instructions

  • Cook the Chicken
  • Place the chicken breasts in a pot and cover with water. Add a pinch of salt. Bring to a gentle simmer and cook until the chicken is fully cooked and tender.
  • Step 2: Shred the Chicken
  • Remove the chicken from the pot and pull it off the bone while still hot (gloves help). Shred or chop the meat, discarding skin and bones.
  • Step 3: Add the Vegetables
  • In a large bowl, combine the shredded chicken with the diced onion and celery.

  • Add the mayonnaise and mix until the chicken salad reaches your desired consistency.
