Materials

  • 1 lb pasta rotini, shells, or elbow macaroni
  • cups diced ham
  • 1 cup sweet peas thawed if frozen
  • 1 cup cheddar cheese cubed
  • ½ cup diced celery
  • ¼ cup finely diced red onion
  • 2 –3 hard-boiled eggs chopped (optional)
  • 2 tbsp chopped fresh parsley optional

Dressing

  • 1 cup mayonnaise
  • 1 tbsp Dijon or yellow mustard
  • 1 tbsp apple cider vinegar or lemon juice
  • 1 tsp sugar optional, or omit if you prefer
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and black pepper to taste

Instructions

  • Mix the dressing separately, toss with the cooked and cooled pasta and the remaining ingredients, then chill for at least 1 hour before serving.
