Tuscan Chicken Mozzarella Bites

Juicy minced chicken seasoned with Tuscan Rub, wrapped around melty mozzarella and cooked until golden and crispy in the air fryer or deep fryer. These bite-size snacks are packed with garlic, herbs, and cheesy goodness—perfect as a quick appetizer, game day snack, or high-protein meal. 🍗🧀🌿

Ingredients
  

  • 1 lb minced chicken
  • 2 –3 mozzarella string cheese sticks
  • 1 tbsp Tuscan Rub
  • ¼ cup whole wheat breadcrumbs optional for coating
  • 1 egg
  • 1 tbsp olive oil for air fryer
  • Cooking spray or oil for frying

Equipment

  • Mixing bowlKnife and cutting board, Measuring spoons, Air fryer or deep fryer, Tongs, Baking tray or plate for formed bites, Paper towels (for draining if deep frying) 🍗bowl, Knife

Method
 

Prep
  1. Cut the mozzarella sticks into 1-inch pieces.
  2. In a bowl combine:
  3. minced chicken
  4. Tuscan Rub
  5. egg
  6. Mix until well combined.
Form
  1. Take about 1½ tablespoons of chicken mixture.
  2. Flatten in your hand.
  3. Place a piece of mozzarella in the center.
  4. Wrap the chicken around the cheese and seal completely.
  5. Roll lightly in breadcrumbs if you want extra crunch.
Air Fryer Method
  1. Preheat air fryer to 375°F.
  2. Lightly spray the bites with oil.
  3. Cook 10–12 minutes, turning halfway.
  4. Internal temp should reach 165°F.
Deep Fryer Method
  1. Heat oil to 350°F.
  2. Fry bites 4–5 minutes until golden brown.
  3. Drain on paper towels.

Quick Dipping Sauce Idea

Tuscan Garlic Aioli
  • ½ cup mayo
  • 1 tsp Tuscan Rub
  • 1 tsp lemon juice
  • 1 minced garlic clove
Mix and chill 10 minutes.
