- 2 large eggs
- 2 tbsp milk
- ½ cup fresh spinach chopped
- Salt to taste
- Black pepper to taste
- Cooking spray
Lightly coat a microwave-safe mug or bowl with cooking spray.
In the mug, whisk the eggs and milk until well combined.
Stir in the cottage cheese and spinach.
Season with salt and pepper.
Microwave on HIGH for 60 seconds.
