Lemon Herb Zucchini (Quick & Easy)

If you want something fast and extra low-carb, zucchini is hard to beat.

Materials

  • 1 tbsp olive oil
  • 3 medium Zucchini
  • 3 garlic cloves minced
  • 1 tbsp lemon zest
  • 1/4 cup herbs fresh

Instructions

  • Slice 3 medium zucchini
  • Sauté in 1 tablespoon olive oil over medium heat
  • Add minced garlic, lemon zest, and fresh herbs
  • Cook for 5–7 minutes until tender
