Lemon Herb Zucchini (Quick & Easy)
If you want something fast and extra low-carb, zucchini is hard to beat.

- 1 tbsp olive oil
- 3 medium Zucchini
- 3 garlic cloves minced
- 1 tbsp lemon zest
- 1/4 cup herbs fresh
Slice 3 medium zucchini
Sauté in 1 tablespoon olive oil over medium heat
Add minced garlic, lemon zest, and fresh herbs
Cook for 5–7 minutes until tender
