  • 2 lb bone-in or boneless skinless chicken thighs
  • 2 tbsp olive oil
  • tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp dried oregano or thyme
  • ½ tsp black pepper
  • ½ tsp salt or to taste
  • 1 tbsp fresh lemon juice
  • Optional: fresh parsley for garnish

Instructions

  • Preheat oven to 400°F (204°C).
  • Pat chicken thighs dry with paper towels.
  • In a bowl, mix olive oil, lemon juice, and seasonings.
  • Rub seasoning mixture evenly over chicken.
  • Arrange thighs on a parchment-lined baking sheet or in a baking dish.
  • Bake uncovered for 35–40 minutes, until internal temp reaches 165°F.
  • Optional: Broil for 2–3 minutes for crispy edges.
