½cupmonk fruit sweetner
½teaspoonbaking soda
1teaspoonvanilla extract

Preheat your oven to 350 degrees F (175 degrees C).

If using regular erythritol, add it to a blender or Nutribullet and blend until it becomes a fine powder. If using a confectioner's low-carb sweetener, you can skip this step.

In a medium mixing bowl, combine the peanut butter, egg, powdered erythritol, baking soda, and vanilla extract. Mix until a smooth, glossy dough forms.

Roll the dough into 12 equal-sized balls and place them on a parchment-lined baking sheet.
