Cheeseburger egg rolls are crispy, golden egg roll wrappers stuffed with seasoned ground beef, creamy American cheese, and tangy dill pickles. It is essentially a classic cheeseburger transformed into a handheld, crispy appetizer form, perfect for game days and parties.
Heat a medium cooking pan over medium heat, add the vegetable oil, and sauté the minced onion until translucent.
Add the ground beef to the pan and break it up as it cooks. Season with salt and pepper, and cook until the meat is fully browned.
Drain off any excess juices and place the cooked meat into a mixing bowl.
While the meat is still hot, add the American cheese pieces and mix until the cheese is completely melted and incorporated.
Stir in the diced pickles and allow the mixture to cool slightly before assembling.
Lay an egg roll wrapper on a flat surface in a diamond orientation. Spread about 2 tablespoons of the cheeseburger filling in a horizontal line across the center, leaving space on the sides.
Fold the bottom corner closest to you over the filling and tuck it under.
Dip your fingers in the egg white and run them along the edges of the wrapper to create a seal. Fold both side corners toward the center and roll the egg roll up tightly.
Heat frying oil in a deep pan or Dutch oven to 350°F (175°C).
Gently place the egg rolls in the hot oil and fry for 2-3 minutes per side until they are golden brown and crispy.
Remove the egg rolls and drain them on a wire rack lined with paper towels before serving warm.
