Ingredients

2olive oil
12piecesweet Italian chicken sausage, cut into pieces
1piecemedium onion, chopped
2largecarrots, chopped
1largepotato, chopped
2piecegarlic, minced
2piecebay leaves
30ozwhite beans, drained and rinsed
2cupBaby spinach
64fl ozlow-sodium chicken broth
to tastekosher salt
to tastefreshly ground black pepper

Instructions

In a large pot, heat 2 tablespoons of olive oil over medium heat.

Add the chicken sausage and brown, stirring occasionally, for approximately 10 minutes.

Add the onion, carrots, potato, and bay leaves. Season with kosher salt and cook until the vegetables begin to soften, stirring occasionally, for approximately 10 minutes.

Add the minced garlic and white beans. Cook for another 2-3 minutes.

Add the kale and cook until it becomes slightly wilted.

Add the chicken stock, season with salt and pepper, and cover with a lid.

Bring the soup to a boil, then reduce the heat and simmer for about 45 minutes (longer is fine for more depth of flavor).

The soup will thicken naturally as the potatoes release their starch. For best results, allow to cool and refrigerate overnight to serve the next day.
