Spinach & Cottage Cheese Microwave Egg Bake

A quick, high-protein microwave egg mug made with cottage cheese and spinach—fluffy, satisfying, and ready in minutes.

  • Cooffe Mug
  • ½ cup cottage cheese
  • 2 large eggs
  • 2 tbsp milk
  • ½ cup fresh spinach (chopped)
  • Salt (to taste)
  • Black pepper (to taste)
  • Cooking spray
  1. Lightly coat a microwave-safe mug or bowl with cooking spray.
  2. In the mug, whisk the eggs and milk until well combined.
  3. Stir in the cottage cheese and spinach.
  4. Season with salt and pepper.
  5. Microwave on HIGH for 60 seconds.
  6. Stir gently, then microwave another 30–45 seconds, until just set.
